Easy, No-Bake Chocolate Bark Recipe

My go-to ‘healthy’ sweet treat with nutrient-dense nuts and berries

I stumbled across this recipe right after I had my second child and was looking for a sweet treat that also supported my recovery. I had AI generate a meal plan based on my needs (breastfeeding, minimize gas, C-section). It was full of nuts and dried fruit, which offer nutrients that support tissue repair, boost energy, and many other benefits. That gave me the idea for a chocolate bark filled with these healthy ingredients. And voilà, this recipe was born.

A Few Recipe Notes 

  • Dark chocolate is essential for this recipe to be considered healthy. Any high-quality dark chocolate will do. I buy the 72% cacao dark chocolate from Trader Joe’s because it’s the most readily available and reasonably priced.

  • I wrote out the recipe so you can see the ingredients and steps, but after you make it once, you can really just wing it.

  • There’s so much flexibility with this recipe; any combination of nuts and dried fruit will work. Or go wild and experiment with other ingredients.

  • To melt the chocolate, I make a double broiler with a heatproof glass bowl nestled in a sauce pan.

 

Dark Chocolate Bark with Nuts, Dried Fruit & Flaky Salt

Ingredients

8 oz dark chocolate (60-70% cacao), chopped (half of the 1lb 72% cacao dark chocolate from Trader Joe’s)

½ cup mixed nuts (eg: almonds, pistachios, cashews, hazelnuts)

⅓ cup dried fruit (eg: cranberries, cherries)

Flaky sea salt like Maldon

Instructions

  1. Melt the chocolate with a double broiler or in the microwave (stir every 30 seconds). 

  2. Pour the melted chocolate onto a baking sheet lined with parchment and spread it out into a rectangle about ¼-inch thick.

  3. Quickly sprinkle the nuts and dried fruit over the melted chocolate, followed by flaky salt. 

  4. Refrigerate for at least 30 minutes then break up and store in sealed container (I find the texture is better and they last longer when stored in fridge).

 
 

Flavor variations

  • Add a sprinkle of cinnamon or cayenne pepper 

  • Mix in toasted coconut flakes, orange zest, or chopped candied pecans into the chocolate before pouring 

  • Vday mix: dried rose petals, goji berries, crushed freeze dried raspberry, dried cherries, pink Himalayan salt

  • Tropical mix: macadamia nuts, toasted coconut flakes, dried pineapple or mango

  • Snack mix: pretzel, crushed chips, M&Ms
